1. What is restaurant sustainability?


Restaurant sustainability refers to food service businesses minimizing their impact on the planet. Restaurants can become more sustainable by using tools that reduce energy use, making deliveries more sustainable, using ingredients that generate fewer emissions and turning food waste into compost, and more.


2. Why is it important for restaurants to be sustainable?


Sustainability for restaurants means operating in a way that protects (including preserving or restoring) the natural environment, promotes social equity, improves the lives of people and communities, and contributes to the economic prosperity of shareholders and stakeholders. interested.


3. How do restaurants measure sustainability?


Restaurants measure sustainability by monitoring water use, energy use, food waste, and non-food waste. Reducing all of this will help a restaurant be more sustainable. Sourcing food locally and serving plant-based dishes can also contribute to a restaurant's sustainability.


What do we do!


We have set a benchmark of not using on average €5 to €6 per day in total electricity. We achieve this goal by using only fresh ingredients, we have a policy of never using frozen meat or fish. When we are not open, the restaurant operates with its unique policy, which means we only use 1 refrigerator and 1 freezer. Many restaurants use many refrigerators and freezers which can cost many €1000 in electricity costs and increase the cost of the food you consume. Our sustainability policy has proven successful in reducing the cost of our bills, for example in January 2023 our monthly bill was €138, easily one of the lowest in the area.


All our meat, fish and vegetables are purchased from trusted local suppliers within a 20km radius of the restaurant. We do not accept deliveries from domestic suppliers of pre-packaged or highly processed frozen foods. We see everything we buy before we buy it just like you do. It is not delivered to us cut or prepared.


All of our soft drinks are served in cans which cool faster than glass, weigh less than glass and therefore reduce the amount of fuel needed to transport them. All the cans we use are recycled and again are from the local area.


We have a wide range of vegetarian and vegan dishes on the menu.
